Originally I was going to focus this month on family-friendly, fast and easy recipes. With everyone back at school after March break and the school year winding down, now's the time that all of us with kids-of-a-certain-age start looking a little frazzled with our hectic schedules, and nothing suffers like the weekly menu when we're pressed for time.
That WAS my plan, anyway, until this crazy weather totally turned my head with all its sweet-talking and sun-shining and balmy-temperaturing and made me not want to think about weeknight time-saver recipes at all. Now all I can think about are fresh spring vegetables: crisp greens and sweet reds and juicy oranges and zesty yellows. And I'm even taking it one step by further by totaling ignoring what's actually in season right now (it's all heavy, starchy, wintry vegetables that don't jive with my fresh and springy vibe at all) and going with real spring produce, like rhubarb and cherries and spinach and green onions and garlic. Mmmmm.
